Wednesday | Chicken with cream and mushroom sauce
A somewhat desperado dinner. None of the ingredients left that Monday's dish so lust-worthy - but cream to use up and little imagination to think of what to cook. Criminally not a vegetable or green in sight! A true 'desperado / can't be bothered' night.
Thursday | Tomato and Butterbean 'casserole'
True desperado cooking at it's best. Nothing inspiring to eat, not much in the fridge, so resorting to an old standby that can usually be put together from ingredients in the cupboard. Could definitely have done with some spinach wilted through it, or some frozen peas - or indeed anything green!
Friday | Breakfast
Just had to include this. It looked soooo pretty and was such a delicious start to the day.
Saturday | Greens at last! Tuna Patties
This was another desperado meal - based around using up what need using up in the fridge. e.g. a combination of leftovers made into a pattie mix. A good idea for using up leftovers and showing you don't always need to follow a recipe specifically, but can work with what you have available.
Sunday | One day to go and February's health kick, kicks in!
This was a recipe I tried from Body and Soul. Beef lettuce cups. Fresh, zingy and yummy
