Monday | Pulled pork with tomato salsa on a bed of grated zucchini, carrot and red cabbage
A real desperado meal! Not exciting, but very functional! Used up leftover vegetables and got in 3 serves of vegetables. A bit over the flavours but thank goodness for the packets of pulled pork and tomato salsa in the freezer.
Tuesday | Pulled pork with tomato, quinoa, fresh corn and zucchini
Another night of little inspiration and the need to use up leftovers. This time the pulled pork and tomato salsa from Monday. With the quinoa and these vegetables it came together beautifully and was one of my favourite meals of the week.
Wednesday | Vietnamese rice paper rolls with pork
WOW and WOW! I impressed myself with these. I always thought that rice paper rolls would be incredibly difficult - but they are easy, a great way of using up leftovers and an incredibly fresh, fun summer meal.

Friday | Crispy skinned salmon with cauliflower 'cous cous'
I loved this meal so much that I have written it up how I adapted it for one person. The original recipe is by Curtis Stone - and it was a winner on all fronts, easy, quick, delicious, healthy.
Saturday | Crispy pork with raw taco shells
This is a must try meal. Totally delicious, bursting with flavour and colour. An awesome summer meal. A real eye-opener.
Sunday | Rice paper rolls with shredded chicken
Never known for moderation, when I like something I like it - hence Rice paper rolls take III! This was another meal bursting with colour and flavour that made it completely more-ish.
