So excited to try this recipe. Realised I tore it out of Delicious Magazine in 2006! Most exciting was making my own flatbread for one and learning how quick and easy it is. Converted!
Tuesday | Ricepaper rolls with Chinese-style Char Sui shredded pork
Putting my recent lessons in Rice Paper rolls to good use. Now have this as a regular 'go to' as a neat way to eat something healthy and interesting, while using up what needs eating in the fridge.
Wednesday | Lamb Biryani
A super-simplified and quick version of a traditional Biryani using lamb mince.
Wednesday | Raw 'chocolate brownies'
I never thought I would be a convert to raw sweet treats. Being an all or nothing kind a gal - I want Cadburys, Lindt or nothing - .... well am eating my words - and LOTS of raw cacao brownies! These are sooooo delicious I had to include them here.
Thursday | Warm salad with salmon
This is very similar to so many meals that I cook - what is funny is that I took this particular recipe from an advert for John West salmon in the Coles magazine. Tragic! But VERY healthy and a great way of loading up with vegetables. The most interesting thing I learnt making this is that it really pays to read the labels on tins of salmon - there is an incredible variation in levels of Omega fats between different brands, and different types of tinned salmon within the same brand. (And really - the only reason I eat tinned salmon is for the Omegas that are meant to be so good for my brain function!) It's definitely not a favourite food!
Friday | Ratatouille with chicken and cauliflower rice
This was my 'virtuous' meal of the week. I'm not really a fan of ratatouille - but it was a great way to use up a quarter of a zucchini, half a tin of tomatoes and do a bit more to see that the cauliflower doesn't go to waste.
Saturday | Chicken and corn soup
Quick, easy, nutritious, pretty, warming.
Shepherds pie with lamb mince
A desperado meal cobbled together with leftovers - DELICIOUS. A great Sunday night dinner.
