I say miracle as it took me a long time to work out what could be done to turn the vegetables I had to work with into a meal. It turned out to be delicious. AND I got to finish and entire cauliflower without throwing any out!
Tuesday | Lamb mince with middle eastern spices on flatbread
This is a very fast hack on the recipe for Middle Eastern Lamb Pizza that I posted last week. I needed a meal in a super hurry, had most, but not all the ingredients for last week's meal, so 'hacked together' this, with what I had. Divine. AND proved that's it really is easy to make your own flatbread if you want a floury base, but have no rolls or bread on hand.

Thursday | Batch cooking step 1
This is the set of ingredients I use to make my favourite batch cooking meal ' 'Gwynneth Chicken'. It's a meal I love - so much so, you will see photos of meals for the week end here. The rest of the week dissolved into meals of Easter Eggs or eating Gwynneth Chicken, over and over and over again! (It didn't even get to the freezer....)
Yep - this meal was on repeat for most of Easter. I wish I had a photo where I 'amped' it up with extra vegetables, e.g. broccoli and spinach as it did look much better than this. AND tasted fantastic. AND best of all was a super healthy, nutritious meal that I just had to reheat.
