Dinner for one - week starting 12 March 2018

After such a winning week of healthy eating and menu planning last week, this week went a bit off track! I did make some delicious meals including great pasta dishes - I just ended up at the supermarket a lot - which meant over-spending, over-indulging and got nowhere near meeting my 5 serves a day 'quota' for vegetables. 

Dinner for one - Week of 26 February

Welcome to the 'What I ate last week' series where I chronicle life cooking for one in the hope that it might inspire and educate. Though this week there was not a lot of inspiration to be found!  The wheels fell of my menu plan pretty early in the week when I resorted to crumpets for dinner on Monday! Reinforcing why I think there is a need for a community forum to help people cooking for one stay on track!

Lentil Soup - Formula

Turning your crisper from graveyard to source of abundance, Lentil soup is hearty, healthy & economical. It's another great 'formula' to learn so that you can cook a single serve portion or adapt to use up or re-purpose the quantity of leftovers or fresh ingredients you have on hand.  A great Autumn / Winter recipe it's a perfect way of making sure root vegetables like potato, carrots, parsnips never go to waste.

This week's menu plan is all about healthy and frugal.  And yes, it is kind of boring! BUT I urge you to keep reading! Working out inventive ways to use up ingredients you already have is a great skill to acquire. Not as much fun as starting with a handful of tempting recipes, but sometimes needs must! Intended to be both inspirational and educational, the 'Menu Plan, Meal Prep & Meals Made' series chronicles life cooking for one on a weekly basis.  This week the focus was using up leftovers, kick starting my health kick.  A bit like last week, I didn't want to spend a lot of time in the kitchen so the 'repeat' button was pushed a lot!
