Making magic out of leftovers
Leftover Moroccan Salmon & leftover ingredients turned into hearty meal with 4 / 5 servings of vegetables
The meal below, doesn't look fabulous - but it actually tasted great, and hit the spot for a good Sunday night mealthat was quick, simple and nutritous - and more importantly saved me from throwing out 'leftovers' lurking in the back of the fridge - that I admit, were already beginning to look less than appetising. You will know what I mean when you see the bowl of sad looking butter beans below!
Tonight was a typical example of when it would have been so easy to skip dinner or resort to takeaway. I am actually embarrassed to share the pictures of both my crazy, messy sink, and lame lot of leftovers. It took a real effort not to make everything look a bit more glam and organised.
So not the world of food blogs.
I really had to remind myself that the whole purpose of this blog is reflecting real life, and helping with the motivation try and put together a reasonably nutritious meal no matter what and the whole purpose is not to look perfect, but to help provide motivation to keep cooking when things are not perfect. No matching containers; no perfect marble kitchen bench, even grizzled looking butter beans as I was too lazy to cover them in gladwrap last night.
Obviously, a group of lack lustre leftovers and messy kitchen sink are problems one is actually lucky to have. Nonetheless, at times it is easy to forget your own fortune and be defeated by the effort required.
In the end I decided to abandon the 1/2 cup of canned tomatoes, and instead bulk up the tasty, yet very unappealing looking 'Morocan Salmon' from Sunday with the butter beans and rocket and feel virtuous about my vegetable intake by serving it on cauliflower 'rice'.
Embarrassed! Only sharing this in the hope that helps encourage others to cook - not matter what the circumstance. And yes - that is the same grey casserole dish that has been sitting there for the last 2 weeks! And yes - I'm STILL trying to remove the burnt on layer of 'Beef Carbonnade'.
Not amazing, definitely nothing to brag about, but filling and contained salmon and 3 - 4 serves of vegetables, so not bad given the lame lot of leftover - and hopefully a reminder that a.) something can be made out of nothing and b.) it really is worth it!
