Super simple, quick, nutritious broccoli soup

Broccoli soup with butter beans

So this week I havebeen on a bit of a health kick - which inevitably means broccoli soup! I actually don't know where to attribute this recipe to.  I have been using one that was provided as part of a yoga detox I did several years running, which I think was a version taken from another yoga detox program! Recently I read a new (awesome) blog that included butter beans. As I was not a on a strict detox regime, the butter beans added extra 'oomph'. There are numerous variations to this soup and go from one extreme to the other - e.g. make it 'clean' and omit the butter beans to make it tastier and use chicken stock instead of water - just work out what suits you. Whatever you choose, I love it as part of any weight loss / health kick phase I am on - it's low in calories, but high in nutrition. A way I often increase the nutrional component, is to add cup of wilted spinach and handful of flax seeds.

    • 1 small to medium onion
    • 3 cloves crushed or finely chopped garlic
    • Large head of broccoli
    • 2 cups water
    • 2 - 3 cups rocket (Arugula)
    • 1 440gm can of butter beans
    • 2 cups water or chicken stock
    • Lemon juice to taste




    • Saute onions and garlic

    • Add broccoli and saute. Put lid on and simmer for 5 mins

    • Add 2 cups of water, put lid on and simmer for 10 mins

    • Add add rocket and butter beans and simmer for another 10 minutes

    • Use hand blender to roughly puree

    • Add lemon and black pepper to serve.
