So bad when menu planning starts going off track on a Monday!!
Tuesday: Simple lentil & vegetable soup
Back on track! (Though rapidly fall off it!). But this is the Lentil soup from my menu plan that was designed to use up the rapidly perishing parsnip, carrot and corn on the cob that were languishing in the bottom of the vegetable crisper. It definitely needed more greens, but nonetheless was warm and nourishing and a great way of using up 'tired' vegetables. It doesn't look that inspiring but it actually ticked a lot of boxes: economical, minimise food waste, quick and healthy.
Wednesday: Omelette meets scrambled eggs!
This is the dish that was meant to be the quiche specified in my menu plan, e.g. a way to use up the leftover egg mix, bacon and corn in my fridge. Well it turns out I was too lazy too roll out the pastry! (Pathetic - especially when you see what I used it for!) So I tried to use it to make an omelette. The problem was the pan was too big. Definitely should have stuck to the original plan!
Friday: Jam tart ...
Eek! The dangers of being home alone on a Friday night at the beginning of Autumn - the need for comfort food wins out! So the lovely home made pastry I had leftover from Sunday which was meant to go into a healthy home made quiche turned into lovely, but not exactly diet friendly jam tarts! I am sure I have a blog post on how to make these for one - just leave a comment if you would like it.
Saturday: Rice paper rolls with poached chicken, red cabbage & mint
I had been hankering after these all week and was sure it was going to be a fantastically fresh and healthy meal - not to mention a way to start using up the large bunch of mint I had succumbed to at the Farmers Market on the weekend. Alas, I got the proportions of fish sauce wrong in the dipping recipe, so it was all I could taste!
Sunday: Coffee cake
After baking because I had friends over last weekend, I was in the baking groove again this weekend. Only this weekend there are no friends to eat the cake! Definitely need to cut it into slices for the freezer - so it doesn't appear as 'dinner' in next week's blog!
