Ingredients. Using up lots of leftover and 'bits' of things here. The jar contains leftover dressing that I will toss through the spinach.
My first step is always to toast the pine nuts. I try to do this as a single task, e.g. not multi-tasking as they seem to go from uncooked to burnt very quickly and need constant watching.
Step 2, chop and prep ingredients for the toppings and salad. Mint, pine nuts, walnuts and cranberries.
Step 3. Saute the onion and garlic, then saute the mince until it is cooked through.
Step 4. Blend the pumpkin and chickpeas together. I added cumin and lemon juice.
A somewhat odd combination - but full of flavour, colour and goodness.
