I couldn't decide what to have for dinner tonight! All the options are on the table. There is the Roast Cauliflower soup, the Lentil soup from last week and the salmon to cook a well as the ingredients for the lamb mince.
The desire for roasted sweet potato won out! This the sweet potato cubed, drizzled with olive oil and ready for roasting. Along with the carrots, which I originally planned to roast and then have with the salmon - but ended up including with the lamb!
The mint which I'm still trying to use up - and was another reason I chose to cook the lamb tonight. I chopped up some mint and tossed it through the cooked lamb mince.
Step 1 was to lightly saute the garlic with ginger & cumin.
Step 2 was to add the lamb mince, break it up and ensure it was cooked all the way through.
The result was a basic, but very tasty 'comfort food' style meal that was simple and quick to cook.
