When there is 5 minutes of cook time remaining add broccoli & corn to the pasta. (This is my hack for saving on washing up, but you can also cook the broccoli & corn separately.)
Gather avocado to add to the top of the dish. I also squeezed some lemon juice over it and added black pepper.
Drain pasta & vegetable mix and put in mixing bowl. Add tinned tuna to the bowl and mix through. Then serve in a bowl and topic with diced avocado.

Boil water for pasta. Gently heat butter and garlic in a pan to cook the garlic.
When garlic is nearly cooked, add chopped, fresh thyme and cook for another minute.
Add chopped mushrooms to the pan and toss through with the butter, garlic & thyme.
Cook mushrooms on low heat until cooked through. When cooked, turn off heat and wait for pasta to finish cooking.
When pasta is 5 minutes from being cooked add broccoli and peas.
Add cream to pan and heat through. (This is entirely optional. So if you want to avoid the extra calories, just leave it out.)
Add cooked pasta & vegetables to pan and mix through with cooked mushrooms and then serve. Serve as is, or add some diced avocado to the top.
