Monday | Lamb mince with tomato salsa topped with spinach & parmesan
Saved by the freezer! This meal started off as a desperado dinner - that was unexpectedly delicious. I remembered the kale at the last minute. The addition of greens made what started as tragic leftovers look very appealing.
Wednesday | Fish Pie
Decadent, rich, creamy fish pie based on Neil Perry recipe featured in SMH's Good Food magazine 26 March 2016. I used salmon and barramundi fillets.
Thursday | Warm salad of lamb mince with roasted beetroot & pumpkin, fetta and green beans. Topped with pomegranete seeds, mint, dried cranberries & pistachios

Friday | Warm salad of roasted pumpkin, beetroot and pancetta on home made flatbread
This was an example of 'leftover magic'. I combined bits of leftovers from the last two days of warm salads - and was delighted with the outcome, it almost felt too pretty to eat.
Saturday | Warm salad of roasted vegetables with pancetta & poached chicken on barley
More leftover magic. I used up the remaining pumpkin and beetroot and served it on a bed of barley to give it a comfort-food feel. I poached a chicken breast to provide more protein and make it a more substantial meal.
Sunday | Warm salad of poached chicken with puy lentils, roast beetroot & pumpkin topped with pomegranete seeds and fetta
Another variation of a warm salad. Again, delicious and pretty.
